CUP CAKE WITH A DESI TWIST AT PAPARAZZI ROYAL ORCHID CENTRAL

Diwali is quintessentially about sweets. How about some cup cakes for diwali ? Cup cake for Diwali?I am sure many are wondering isn’t diwali about traditional Indian mitais. But hey wait …lets not just rule out this yummilicious dessert . This diwali i tasted cupcakes with a twist at Paparazzi Royal Orchid Bangalore . 

I was invited recently to a fun cup cake making session with Chef Hafizullah Baig . These cup cakes were very different from the regular ones. The frosting was all desi tasting ingredients and was very innovative. I just loved them .I had taken my daughter too the workshop and guess what not only me but she too enjoyed the event a lot. She infact loved decorating her own cup cakes.

The fusion cakes the chef did was :

Peanut Butter cream

Kesar Khoya Cream

Gulkand Frosting

Jamoon Pistachio Cream Cheese Frosting

Masala Chai Frosting

Kahlua Oreo Frosting

Dark Chocolate Ganache chili Frosting

The Chef Hafizullah Baig was very friendly ,interactive and knowledge sharing person.

He even shared his recipes of cake and frosting with us and wait there is some good news for you all too. I am sharing all those recipes with you all friends …

But before i share the recipes.. have you ever thought how the cakes evolved ? Whats the difference between Cupcake and Muffin ?

The cake evolved in earlier 19th century in the United States. According to food historians have yet to point, exactly where the name of Cups cake originated. There are two Theories coming up… 1) the cake were originally cooked in cups 2) The ingredients used to make the cups cakes were measured by the cups.

Cup cakes were convenient because, they get cooked much quicker than larger cakes. cakes looks similar to Muffins. But, there is huge difference between cakes and Muffins.

MUFFINS :

  • Are Dense, closer to Bread texture
  • Can be served as savory or sweet
  • Served without toppings
  • Flour is roughly stirred in all at once
  • Served during B’fast

CUP CAKE

  • Very lighter in texture
  • Only in sweet version can be served
  • Often Iced or Frosted
  • Incorporating flour into batter smooth
  • Served as a dessert on special occasion

Ingredients

500 gm Butter
500 gm Castor sugar
9 nos Eggs
450 gm Flour
10 gm Baking powder
250 ml Milk
2 ml Vanilla essence

Steps

  1. Preheat the oven to 180c
  2. Put the Butter and sugar in bowl and beat until pale and fluffy
  3. Lift the flour and baking powder into the Bowl
  4. Beat the eggs and vanilla and add to the bowl. Beat until just combined
  5. Spoon the mixture into paper cases
  6. Bake for 18 to 20 minutes until risen, golden and firm to the touch
  7. 7ool down to room temperature at least for 10minutes.
  8. Pipe Desire Frosting and garnish it.

Ingredients

50 gm Unsalted Butter
100 gm Icing sugar
100 gm Peanut Butter
50 ml Whip Cream
Rainbow Sugar Balls to garnish

Steps

  1. Keep Butter at room temperature. Should be soft in texture not be Melted.
  2. Mix Butter, icing sugar, peanut Butter with electric beater until smooth and creamy on Medium speed.
  3. Finally add the whip cream on high speed until the Mixture is light and
    Fluffy.

Ingredients

50 ml Whip Cream
100 gm Sweet Khova
0.5   gm Kesar(Saffron)
Silver Sugar Balls to garnish
Saffron Threads to garnish

Steps

  1. Beat Whip cream with electric beater until smooth, light and Fluffy.
  2. Blend Sweet Khova in whip cream without lumps.
  3. Dissolve Saffron in hot cooking cream add along with mixture.

Ingredients

50 ml Whip Cream
100 gm Gulkand
Rose Petals  few garnish
Chocolate Vermicelli few Garnish

Steps

  1. Beat Whip cream with electric beater until smooth, light and Fluffy.
  2. Blend Gulkand Compote (Available in Market) in cream.

Ingredients

20 gm Unsalted Butter
20 gm Icing sugar
100 gm Philadelphia cream cheese
1 no Lemon zest
50 ml Whip Cream
Gulab Jamoon to Garnish
Pistachio Slices to Garnish

Steps

  1. Keep Butter at room temperature. Should be soft in texture not be Melted.
  2. Mix Butter, icing sugar, Philadelphia cream cheese, Lemon Zest with electric beater until smooth and creamy on Medium speed.
  3. Finally add the whip cream on high speed until the Mixture is light and Fluffy.

Ingredients

MASALA CHAI EXTRACT

Ingredients

50 ml Whip Cream
100 ml Masala Chai Extract
50 gm Icing Sugar
Cadbury Gems for Garnish
Masla chai extract
300 ml Water
50 gm Tea Leaf
2 gm Cinnamon
5 gm Cardamom
1 gm Cloves
5 gm Fresh Ginger
Combine all above ingredients and keep it on Simmer for thirty mins, Bring down masala extraction to strain it and Cool it down in refrigerator.

Steps

  1. Beat Whip cream with icing sugar in electric beater at medium speed.
  2. In co-operate Masala chai extraction slowly into it.
  3. Garnish it with Gems.

Ingredients

50 gm Unsalted Butter
100 gm Icing sugar
50 ml Espresso Coffee
2 gm Sunrise Coffee Powder
50 ml Kahlua Liquor
50 ml Whip cream
Oreo CookiesFewGarnish

Steps

  1. Keep Butter at room temperature. Should be soft in texture not be Melted.
  2. Mix Butter, icing sugar, Espresso Coffee, Coffee Powder with electric beater until smooth and creamy on Medium speed.
  3. Finally add the whip cream and Kahlua Liquor on high speed until the Mixture is light and Fluffy.
  4. Garnish it with Oreo Cookies

Ingredients

200 gm Dark Chocolate
100 ml Heavy Cream
75 gm Unsalted Butter
1 gm Dried Red Chilies

Steps

  1. Combine all the above ingredients in a Bowl except Chilies. Use Microwave or Double Boiler to melt the chocolate.
  2. Add chilli flakes (without seed) into the mixture, stir gently with wire whisk to get silky and smooth texture.
  3. Allow it cool in Refrigerator till the time it becomes thick and firm.

All in all i just loved all these desi flavored cup cakes. The best for me among all were masala chai and gulkand frosting cupcake.

I am not sure if post diwali these cup cakes will still be available at Paparazzi royal Orchid, but still you can head straight to the restaurant and check out other delicious creations by Chef .
