Carrot Kheer or Carrot Payasam, always takes me down the memory lane! As a kid (even now for that matter), i was fussy drinking milk. But amma was very strict and i had to compulsorily have milk in the evenings. Come evening and when i was forced to have milk ,i would simply shake my head in refusal and would search reasons ;” today I’m tired / I’m having head ache/ blah blah blah ; pls give me coffee that’ll make me fresh”. But whenever amma made this carrot milk , Every sip was enjoyed and even the last drop from the cup was licked clean. She would chill it in fridge and I could never say no to it. She was so happy that along with the milk ,nutrients of carrots are going in….

You have to try really hard not to love this dessert. Thick and creamy Carrot Kheer flavored with cardamoms with right amount of sugar, not too sweet or too bland. The addition of almonds and cashews adds a distinct texture and nutty flavor and pairs up with carrot beautifully. The best part of the payasam is that you need not add much sugar as the carrots aid natural sweetness. You can have this healthy milkshake as much as you like without worrying about your weight.

This is surely one of those quick and easy desserts that  you can make for any festivals or when you are short of time, or when your guests are just a few steps away from your home…A must have recipe in your books!

Carrot Payasam recipe with step by step photos :

  • Soak cashew and badam in water for 15-20 mins. Peel off almonds skin. Keep aside
  • Peel the skin of the carrots and roughly chop it.
  • Add a tsp of ghee and saute them in ghee for 1-2 mins.
  • Pressure cook carrot by adding 1 cup of milk & 1/2 cup water till 3-4 whistles.
  • Allow it to cool .Check if carrots are cooked soft .
  • Grind the carrots along with cashew, badam , cardamom and a pinch of saffron . Blend to a smooth paste.
  • Add this carrot paste to the milk, add sugar , mix well . Add another 2 cups of milk and adjust the consistency .
  • Simmer and bring the payasam to boil on low flame . Let it boil for 2-3 mins. Keep stirring.
  • Switch off .Garnish with roasted nuts if you want.
  • Serve this delicious Carrot Kheer/ Payasam hot, warm or chilled as a dessert and enjoy! I personally prefer to store it in refrigerator for at least 3 hours and serve chilled

Points to note while making Carrot Payasam :

  • Sautéing the carrots in a tsp of ghee for 1-2 mins and later cooking , enhances flavor and aroma .
  • I usually like this payasam , drinking type like a nice thick milk . Howeve if you like more thicker version , you can increase the carrot quantity and nuts quantity too.
  • To make a completely vegan , you can cook in water and later boil in almond milk . Also skip ghee .
  • Addition of saffron or kesari is optional . Gives good color and additional flavor.

Ingredients
 

  • 1/2 Litre Milk
  • 3 – 4 nos carrot, Medium Size
  • 1/2- 3/4 cup Sugar, adjust according to your preferance

    Ummm… Yummy! What I like about it best is that there is not much addition of sugar so there are no weighty issues, quite a unique thing for a sweet dish. Should try this one out, from your pictures, it looks a true delight 🙂
