Set dosa s are very popular across Karnataka and are made usually with a fermented batter. They are like pancake and is usually served as a set of two or three …ie as pairs or sets.

I have shared earlier the conventional set dosa recipe that you get in darshini s , today it’s time for instant version .

Thinking what to make for tomorrow’s breakfast? Every day it’s a big headache for most of us. How about some super healthy Dosa’s? I know now you’ll tell me uff… i forgot to soak, grind ferment etc…

Worry not … today I have for you all no grind no fermentation ” Instant Set Dosa / Sponge Dose ” . It can be made in just 15-20 mins with very basic ingredients like rava , poha, curd etc that’s easily available in any kitchen. Just soak rava and poha for few minutes in curd, grind it smooth and later add little baking soda , proceed to make dosa.

Voila .. you will be amazed by those pores and the softness of the dosa , once they are done . Trust me no one can make out it’s no ferment / instant dosa .. tastes and looks exactly the same as the usual set dosa recipe that i had shared earlier . Serve it with your choice of chutney / kurma and be ready to receive accolades !!

Instant Set Dosa recipe with step by step photos :

Wash and drain 1/2 cup poha to remove any impurities . Transfer the washed poha to a mixing bowl .

Add in 1 cup Upma rava. You can use either medium or fine rava.

Add in 1/2 cup of curd / butter milk and 1 cup water. Use little tangy curd for better result .

Soak these ingredients for 30 mins ( if you soak 1 hour also nothing will happen )

After 30 mins, rava and poha would have soaked nicely. Add little salt and grind smooth. If required add some water to grind.

Transfer the ground batter to a vessel .

Add 1/2 tsp Eno or cooking soda. Give a quick mix. Adjust dosa batter consistency by adding required water.

Add eno / baking soda only towards the end , when you are ready to make dosa.

Heat a cast iron pan or non-stick pan. Pour a laddle full of batter and slightly spread it. No need to make thin ,make like pancake. Drizzle few drops of oil

Flip n cook both sides .


Enjoy soft spongy Instant set dosa with ur choice of Chutney or Sambar or kurma .

Points to note :

  • Do not skip eno or cooking soda . This is what adds porous ,spongy texture , reacting with the curd .
  • Use little tangy curd / butter milk as far as possible for best result . Since it’s a no ferment dosa , using little tangy curd improves the taste .
  • If you want to skip curd , instead of it add 1/2 tsp of citric acid crystals ( nimbu uppu / nimbu ke phool ) for tanginess .
  • Instead of thick poha , you can use thin poha too . In that case a resting time of 5-10 mins is also enough .
  • Instead of upma rava or medium rava , you could use fine rava or chiroti rava .
  • Add eno / baking soda only towards the end , when you are ready to make dosa.
