  1. Wash and soak rice for about 15 to 30 minutes. soak khus khus for 15-20 minutes
  2. Meanwhile, prepare Masala. Add all the ingredients mentioned under ” Ingredients for grinding ” to a mixer one by one.
  3. Add around 1/4 cup water and grind to a smooth paste. Set aside.
  4. Heat oil in a pressure cooker and add bay leaf, jeera and saunf.
  5. Then add sliced onions. Saute till transparent.
  6. Next, add the tomato pieces and saute till mushy.
  7. Add all the veggies. Saute for a minute.
  8. Add the ground masala paste. Saute for 2-3 minutes.
  9. Let the raw smell from the masala go. This step is very important.
  10. Then drain and add the soaked rice. saute for 1-2 min.
  11. Add 2 cup water ie 1: 2 proportion including that used for grinding masala. Add salt to taste and squeeze lime. Mix and bring to boil. Taste test. The water should be slightly salty and spicy. Once pulao cooks, it will be perfect. Pressure cook for 2 whistles.
  12. Open the cooker only after pressure is released completely. Fluff the rice gently with a fork.
  13. Vegetable Pulao is ready. Serve with onion Raita or cucumber raita.
