Today i have for you all a very healthy side dish that is very famous in South india. Made from Mixed veggies , coconut and curd ” Aviyal / Avial ” is a traditional dish of Kerala .Any Onam sadya is incomplete without Aviyal . Colour ful assorted veggies in a coconut cream base .. aah its such a delight to see and of course taste too .. What say friends ?
Though Aviyal is usually associated to Kerala cuisine .. its very common in parts of Tamilnadu and Udupi as well . Making of aviyal varies from home to home and regoin to region. Few like curd in thier aviyal and some don’t. Few make aviyal dry and some make it gravy type . But the basic requirement for any aviyal is lot of veggies which is perfectly cut and just cooked ( shouldnt be mushy ) , lot of coconut and yes a strong tempering with coconut oil . I usually make my aviyal semi gravy type .The commonly used vegetables for making aviyal are beans, carrot , long beans, peas, ash gourd ,ivy gourd, drumstick ,potato, yam, raw banana , pumpkin, brinjal,cucumber ….you can use all of them or as many vegetables you can get .
